Pink Pony Club

I’m gonna keep on dancin…

The Pink Pony Club comes from Leandro DiMonrova (@theeducatedbarfly), and it’s built specifically for Waterloo Gin’s Prickly Pear & Rose expression. This gin starts with their award-winning No. 9 Gin base and infuses it with prickly pear fruit, citrus, rose petals, and soft floral botanicals. Those flavors don’t just sit in the glass—they anchor the whole cocktail. Strawberry syrup, Campari, fresh lemon juice, and an egg white create brightness and structure. The result is pink, balanced, and genuinely delicious. Plus, during October, Waterloo Gin supports Susan G. Komen, so this drink means something beyond the coupe.

Cheers, y’all!

ingredients:

  • 1¾ oz | 52 ml Waterloo Prickly Pear & Rose Gin

  • ¾ oz | 22 ml Fresh Lemon Juice

  • ¾ oz | 22 ml Strawberry Syrup (recipe below)

  • ¼ oz | 7.5 ml Campari

  • 1 Egg White

  • Lemon Twist Garnish

    —
    STRAWBERRY SYRUP (Makes ~1 Cup)
    —
    250g Fresh Chopped Strawberries
    250g Baker’s Super Fine Sugar
    —

Place strawberries and sugar into a vessel and mix thoroughly until all strawberry pieces are well-coated. Cover and refrigerate for at least 24 hours to allow the sugar to extract the juices. After 24 hours, pour the mixture into a nut milk bag or clean tea towel over a clean container. Squeeze firmly to extract all pure fruit syrup from the solids. Store the syrup in the refrigerator.

instructions:

Add all ingredients to a mixing tin. Shake vigorously for 8-10 seconds. Double strain into a chilled coupe or pony glass. Garnish with Peychaud's bitters over the foam and a strawberry slice.
