Smoked Pineapple Syrup
The smoked pineapple syrup is a smokey, fruity syrup that can go into any summer cocktail like a Margarita or Daiquiri riff.
ingredients:
1 Pineapple (cut into chunks)
½ cup | 120 ml Water
1 cup | 200 g Cane Sugar
instructions:
Preheat your grill to 400°F. Place pineapple chunks directly on the grates and cook until lightly charred and caramelized, about 10–15 minutes. Cut into cubes and top with 1 cup of sugar to macerate and draw the juices out to make the syrup (about 24 hours). Bottle and store for 1 week in refrigerator.
