The Port[Land] Royal
Let’s put that pineapple demerara syrup to good use.
Figured its been a while since I’ve flexed the R&D muscle and what better way to kickstart it by using my buddy Jordan’s super easy pineapple Demerara syrup (check out his reel in the stories). This recipe was an easy one to make and right up my alley… and probably yours too.

(Yes, I know I need a new microphone.)
ingredients:
1 oz | 30 ml Haitian Rum
½ oz | 15 ml Jamaican Rum
½ oz | 15 ml Pineapple Demerara Simple Syrup
1 oz | 30 ml Oloroso Sherry
3 Dashes Angostura Bitters
Orange Twist (Garnish)
instructions:
Combine all ingredients except the garnish mixing glass with ice. Stir, strain and pour the cocktail over a large ice cube and garnish with an orange twist and pineapple front (optional). Serve and enjoy! Cheers y’all.

Style is personal. So why should your cocktail try to copy somebody else’s?
I teamed up with my friends at Ralph Lauren Fragrances to build a cocktail around their Ralph’s Club New York Parfum, and the fragrance did most of the talking. Black currant, cognac, oud wood. That’s basically a drink order.
So we built a Manhattan style sipper with cognac as the base, swapped the sweet vermouth for creme de cassis and a touch of dry vermouth, added a barspoon of absinthe and a few dashes of bitters, then finished it with an expressed lemon twist for brightness. Given the NY roots on this bottle, I’m calling it The State of Mind.
