Jumping on the pickle margarita bandwagon… c’mon in, we’ve got room 🥒

Yeah I know it’s been done but had to try it for myself. In theory it works right? You put a salt (brine) and lime (acid) in your margaritas right? So why not add pickle juice which adds those elements as well. I used a spicy pickle brine here and it was incredible.

Cheers y’all.

ingredients:

  • 2 oz | 60 ml High Proof Tequila

  • ¾ oz | 22.5 ml Lime Juice

  • ½ oz | 15 ml Spicy Pickle Juice

  • ¾ oz | 22.5 ml Agave Syrup

  • Pickle + Arbol Chili (Garnish)

instructions:

Add all ingredients to a shaking tin (except garnish). Shake with ice and strain over pebble or crushed ice. Garnish with pickle + pepper.

Let’s put those watermelon rinds to good use.

You probably saw this on an earlier reel (see linked Reel) but I don’t think I ever showed y’all how to make it. Did you know you can eat watermelon rinds? If they’re pickled, they’re amazing in salads, as a snack and in this case, as a margarita. Sustainability is the name of the game folks. You’re going to love this recipe.

ingredients:

  • 1½ oz | 45 ml PATRÓN Cristalino

  • ½ oz | 15 ml Lime Juice

  • ¾ oz | 22.5 ml Watermelon Juice

  • ½ oz | 15 ml Watermelon Pickle Brine

  • ½ oz | 15 ml Agave Syrup

  • Pickled Watermelon Ribbon (Garnish)

  • Watermelon Cube (Garnish)

instructions:

Add all ingredients to a shaking tin (except garnish). Shake with ice and strain over pebble or crushed ice. Garnish with pickled watermelon ribbon and a fresh cube.

PICKLED WATERMELON RIND (WITH BRINE)

1500g Watermelon Rind (outer skin removed)
400g White Vinegar
250g Water
100g White Sugar
37.5g Kosher Salt
2 Sprigs Fresh Dill
5 Peppercorns

Prepare watermelon rinds by peeling outer skin of watermelon and harvesting only the white crunchy parts of the watermelon. Cut into desired sizes and set inside quart sized mason jars with peppercorns, bay leaf and dill sprigs. In a sauce pan, combine all other ingredients over low/medium heat until salt and sugar are dissolved. While still warm, pour over the watermelon rinds and secure the lids. Store on the counter upside down for 24 hours then transfer to the refrigerator right side up.

A cocktail worthy to celebrate National Rosa Tequila Day.

Together with my friends at @calirosa, I’ve created a recipe which highlights Calirosa - a tequila aged for 30 days in red wine barrels which gives it its unique pink hue along with adding notes of strawberry, honey and oak. This recipe is meant to be enjoyed with friends and its a perfect drink to bust out at your next pool party.

Cheers y’all!

ingredients:

  • 1½ oz | 45 ml Rosa Blanco Tequila

  • ½ oz | 15 ml Cranberry Juice

  • ¼ oz | 7.5 ml Fresh Lime Juice

  • 1½ oz | 45 ml Fresh Grapefruit Juice

  • ½ oz | 15 ml Triple Sec

  • ¼ oz | 7.5 ml Agave Syrup

  • Garnish: Lime Wheel + Edible Flower

Combine all ingredients except garnish into a shaking tin with ice. Shake and strain into a rocks glass over a large cube, garnish with a lime wheel and a pink edible petal.

Why are you picking all the green strawberries?” - my wife

#ad21+ Together with my friends at @codigo1530, I made a crushable margarita riff made using pickled strawberry brine, WITH ingredients as fresh as the tequila itself.

During strawberry season last year, I was lucky enough to pick some beautiful green (unripe) strawberries from a local farm here in Charleston. I’ve seen local chefs utilize these in salads and savory dishes but my mind immediately went to how I could use it in a cocktail recipe. Green strawberries bring acid, vegetal brightness, and subtle tannin that will play really well with the vegetal, bright notes in Codigo 1530 Blanco.

This one is a must-try, cheers y’all.

ingredients:

2 oz | 60 ml Codigo 1530 Tequila Blanco

½ oz | 15 ml Lime Juice

½ oz | 15 ml Pickled Strawberry Brine

¾ oz | 22.5 ml Agave Syrup

1 Strawberry (quartered)

Lime Wheel + Fresh Strawberry (Garnish)

instructions:

Rinse and hull the green strawberries. Halve larger ones so the brine penetrates evenly. In a small saucepan, combine vinegar, water, sugar, and salt. Bring to a gentle simmer, stirring until fully dissolved. Remove from heat. Add peppercorns, bay leaf, and lime peel to a clean jar with the strawberries. Pour the hot brine over the fruit, ensuring everything is fully submerged. Let cool to room temperature, then refrigerate for at least 24 hours before using. Flavor develops best after 48 hours. Store refrigerated for up to 1 year.
