Strawberry Peppercorn Shrub (Syrup)
Who says this ingredient doesn’t belong in cocktails? 🤔
Together with my friends at cambromfg, I’m going to show you how to make an alcoholic and non-alcoholic version of the same cocktail using a strawberry peppercorn shrub made with… yep, vinegar.
Whether you know it or not, you have eaten or drank something at a restaurant that was made or stored in a Cambro. This brand is ubiquitous within the F&B community and highly regarded as a staple in any kitchen. Enter: CamRounds, the next product in the Cambro home storage lineup.
As you can see from the video - this shows the versatility of the CamRound as I make my Shrub. I love that uses the same lid as my CamSquares and I can easily stack them in the fridge. Not to mention, the ability to use the corners as a ‘spout’ to easily pour from the corners, despite the round base. This is especially helpful when dealing with liquids… like cocktails :P

You know what they say about an apple a day… Yeah you know the rest, I create a great winter cocktail using fresh Koru apples from New York. If you’ve never heard of the Koru variety of apples, they are crisp, extremely sweet, juicy and most importantly, sustainable - making them the perfect apple to use for this season. The cool part about these apples is they’re slow to brown so they’re perfect for garnishing your cocktail, as well as using it as the main ingredient. Peppered Strawberry Shrub
So its spring… and you’re stuck at home with a bunch of fresh berries in the fridge and all this time… why not make a homemade shrub? If you’ve never heard of a shrub, its a decades-old way of preserving fresh fruit by macerating it in sugar, then adding vinegar to extend the lifespan - the end result being a sweet, sour and fruity syrup. The cool part about it is it doesn’t have to contain alcohol and makes for an amazing mocktail for those of you who just want a refreshing beverage to drink at home during the day.

We may have bought almost too many strawberries at @ambrosefamilyfarm the other week and had the idea to turn these vine-ripened strawberries into a black pepper/strawberry shrub for a balance of sweet, spicy, sour and fruity. Now the fun part is taking this syrup and creating a cocktail out of it. I used @hendricksgin because of the cucumber notes, then added our black pepper/strawberry shrub syrup, lime and mint to create a refreshing springtime drink you can make at home.
